GiovenTUM 2025: The Future of Biochemistry Meets in Florence

The scientific meeting focused on the future of biochemistry, featuring oral presentations and poster sessions with researchers and students. To disseminate WP3 outcomes within the biochemistry research community, a scientific poster was presented at the congress, titled:
“Development and characterization of fermented donkey milk drinks: a novel source of the bioavailable form of folic acid”
The poster focused on:
- The different folate production pathways
- The characterization of the various folate forms produced
- The key analytical parameters monitored during fermentation
The contribution emphasized the biochemical mechanisms underlying folate biosynthesis by LAB strains and highlighted the nutraceutical relevance and innovation potential of the T4ML outcomes.
